An Ordinance Providing for a City Meat Inspector,
Fixing his Duties and Compensation; Providing
for the Protection of the 2ublic Health; Reg -
ulating the Operation in the City of Okeechobee
of Meat markets and Vehicles Peddling Meats, and
Providing for an Inspection of the Same; and To
Regulate the Sale of Meats in the City of Okee-
tlhobee, and to Provide for the Inspection of
Such Meats; And to Provide a Penalty for the
Violation Thereof:

OP UXSECHUBEE, FLORIDA:
Section 1. There is hereby created the office of City Meat
Inspector of the City of Okeechobee, Florida, who may be the Chief
of Police of said city, to be appointed by the Mayor, and whose
duties shall be to inspect all markets and vehicles where meats are
displayed or offered for sale, or sold or peddled, and report the
findings of such inspection to the City Clerk, upon application of
any one desiring to operate a market or vehicle fdr the sale of
meats. Also to inspect all fresh meats displayed or offered for
sale in the City of Okeechobee, and stamp his approval thereon.
Section 2. All persons firms or corporations desiring to
operati\a meat market th the.City of Okeechobee or peddle fresh
meats frqm a vehicle or stand in the streets of said city shall first
apply to the City Clerk for a permit to do such business. If after
a report of the City Meat Inspector that the premises or vehicle
from which said meats arto be sold are constructed and equipped in
accordance with this ordinance and the laws of the City of Okeechobee
the permit shall by granted. These permits shall be for one year,

dating from January first, and shall not be transferrable. Permits
issued before January first 1922, shall run throughout the year 1922.
A fee of One Dollar and Twenty -five cents shall be paid as a permit
fee to defray necessary inspection services, one dollar of which
shall go to the meat inspector, and twenty -five cents to the City Clerk.
It shall be the duty of the meat inspector, and he is hereby author-
ized, to make such additional inspections or examinations of all
meat boxes, ice boxes, markets, wagons or vehicles where fresh meats
are kept or exposed for sale, from time to time as he shall deem
necessary, to determine if the provisions of this ordinance are being
complied with, but no fee shall be paid for such additional inspections.
Section 3. It shall be unlawful to overate a meat market, or
peddle meats upon the streets of Okeechobee without a duly executed
permit.
Section 4. All meat markets shall be comoletely screened against
flies. All wagons and vehicles engaged in the business of peddling
meats shall be completely screened against flies, and the meat therein
for sale shall be protected against dust and germs by being covered
with heavy cloths or paper. All meats shall be cut, handled and
wrapped in paper before being taken from the screened enclosure, and
no meat that has been exposed to flies or dust shall be sold.
Section 5. All meats shall be thoroughly drained of all blood
and liquid wastes before being displayed or offered for sale either
in a market or vehicle. All meats displayed or offered for sale
shall be hung upright from hooks or laid upon slatted false bottom
floors. This shall apply to both markets and vehicles alike..
Section 6. It shall be unlawful for any person, firm or cor-
poration to sell, offer for sale or peddle from vehicles, any meats
in t1 City of Okeechobee unless the same has been inspected after

slaughtering and approved by the City Meat Inspector, except meats
beafing the inspection stamp of the U. S. Department of Agriculture.
Provided however that anyone dissatisfied with any inspection of the
meat inspector may appeal to the Mayor by eiving notice to the inspec-
tor and posting U..00 as a forfeit, which shall be returned to him
In case his appeal is sustained, otherwise kept by the inspector to
cover his costs. In case of such notice of appeal the inspector
shall immeciately bring the matter before the Mayor for his decision,
which shall be final.
Section 7. The City Meat Inspector shall be paid a fee of
twenty -five cents for each pork, mutton, veal, or beef insoected,r be ra;d
by the party offering the same for inspection.
Section 8. Any person, firm or corporation violating any of
the provisions of this ordinance shall be punished, upon conviction,
by a fine of not exceeding ten dollars, or imprisoned not exceeding
ten days, for each offense. Both such fine and imprisonment may be
imposed at the discretion of the Mayor, who may also suspend the
permit of such person, firm or corporation, thus convicted, for an
indefinite or a definite period, or revoke it entirely.
Section 9. This ordinance shall take effect immediately upon
its passage-and approval by the Mayor.

The above ordinance read a first time as a whole and passed to
second reading by a 2nv ./ vote of members of City Council
present was by vote placed on second reading, and read
by sections and passed to a third reading by ay,, , vote,
read as a whole on third reading and out on final passage, being
passed by the following vote on call of the roll.
